A girlfriend of mine is turning 30 on Tuesday so I decided to bake her a cake. I wanted to make anything she wanted but she asked for Almond layer cake with amaretto filling which basically sounded like a foreign language when she spoke it, a series of clicks and grunts. This is not the National Geographic Channel, girl!
After a week of searching Almond cake recipes and trying to figure out how not to destroy homemade almond paste, I decided to make jumbo vanilla cupcakes and add almond extract to taste to try out the recipes.
I did the same with the buttercream and added Amaretto di Saronno to taste. And, no, I did not drink any while baking, with my luck – I would have burned myself or ruined the foods, ha ha ha ha!
Nevertheless, they turned out terrific. “Amazing” was her choice of word. I think next week I will attempt to fill some almond cupcakes with the amaretto buttercream and ice them with vanilla.
