Last week my nieces and I made a lemon layer cake for their uncles 21st birthday. It was so good that the oldest, 9yrs, decided that she just had to have more. I mean, she acted like an addict! She kept looming around the cooling cakes and tapping her fingers together. I had to make her hold her infant brother so she would not sneak back in and steal chunks of the cake! She even said, “Oh, come on, Aunt Heather – just let me have a little, we can make another. Uncle Eric won’t mind, I promise!” Then, when moving the cooling cake to another cooling rack, it broke into 4 pieces, which were easily laid back together. She spouted, “Ooh, let me take that big hunk, we can fill it in with icing and no one will ever know!”. Great, my niece is a lemon cake head. She’s a lemon cake junkie! Good Lord!
I promised them that we’d make some lemon cupcakes this week to curb her craving and lunatic lemon cake bandit urges. So I brought over the necessities to make two dozen lemon cupcakes and a strawberry layer cake for good measure. We made homemade buttercream icing for both, lemon for the cupcakes and vanilla for the strawberry cake. Of course we dyed them for the sake of fun! An hour later we came up with these:
I think they had a blast and I know I have created a couple of baking monsters! They want us to make peanut butter and chocolate cupcakes next week, since school is starting. They think they need a cupcake every day for school. How sweet of them. Yeah, right! I’m sure my Sister, their Mother is thrilled.. Oops, sorry Sis!
